Pumpkin Spice Whoopie Pies

I've been wanting to make a pumpkin dessert unlike ones I've made in the past. I came across this recipe online (I can't even remember where!) and printed it off to make. My family is great at being my guinea pigs for taste-testing new desserts, so I made it for a family reunion this past weekend. They were amazingly delicious and my sister told me that I'm not allowed to see her again unless I have this dessert with me. I think she means it.

PUMPKIN SPICE WHOOPIE PIES

  • 1 cup pumpkin
  • 1/2 cup butter, softened
  • 1 package spice cake mix
  • 2 eggs
  • 1/2 cup milk
Filling:
  • 1/2 cup butter
  • 1 (8 oz.) package cream cheese
  • 2 cups powdered sugar
  • Half the jar of marshmallow cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
Beat the pumpkin and butter until smooth. Add cake mix, eggs, and milk and beat on low for a minute, then on medium speed for a minute. Cover a cookie sheet with parchment paper or oiled foil. Drop tablespoon mounds on cookie sheet. Bake for 15 minutes at 375 degrees.

For the filling, beat together the butter and cream cheese until smooth. Add the remaining ingredients. Beat until well combined and smooth. Refrigerate for 30 minutes before use.

To assemble, spoon filling onto the flat side of a cookie and then sandwich a second cookie on top of the filling - similar to an oreo.

You would think that my love for pumpkin would have made me make these. I haven't but they are bookmarked! Yours look excellant.
