Hamburger Pie

So I was craving comfort food the other night and couldn't figure out what to fix for dinner. I was looking through some family cookbooks when I came across this recipe from one of Joe's cousins. I've made some of her recipes in the past and they've been delicious, so I knew this would be perfect for my craving! I've made the Bisquick recipe for Hamburger Pie in the past so I was expecting something like that. This turned out to be more like Shepherd's Pie, minus the veggies you put in it. Either way it was delicious and exactly what I needed!!

HAMBURGER PIE
  • 1 lb. ground beef (I used ground turkey), browned
  • Instant potatoes (enough for 8 servings), not made
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion
  • 1/4 cup ketchup
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
Heat the oven to 350 degrees. Mix the meat, half of the instant potatoes (still in powder form), egg, salt, pepper, onion, ketchup, and milk. Spread in an ungreased 9-inch pie pan. Bake uncovered for 35-40 minutes. Now follow the direction on package and make the remainder (4 servings) of instant potatoes. Top the baked hamburger pie with the mashed potatoes and sprinkle with the cheese. Bake for 5 minutes longer or until the cheese is melted.

I've actually made this exact dinner. Elizabeth S's recipe right? It was good.

Yes, this is Elizabeth's recipe. I had it as leftovers last night for dinner and it was still delicious!
