Puffy Ovens with Apple Syrup

This recipe is a childhood favorite of mine. On special occasions my mom would wake up and make the family Puffy Ovens (or German Pancakes as the majority of the world calls them) and homemade Apple Syrup. The syrup obviously is optional but it makes them extra yummified! Joe and I have made it a tradition to make this breakfast every Sunday morning. It's the only thing that gets me up bright and early that day. =)

PUFFY OVENS
  • 1/2 cube of butter
  • 6 eggs
  • 1 cup flour (to make this extra healthy I've used whole wheat pastry flour and it's worked great)
  • 1 cup milk
  • 1/4 teaspoon salt
Melt the butter in a 9x13 glass dish. Whip the eggs, flour, milk, and salt together. Pour this mixture over the melted butter in the dish. Bake at 450 degrees for 15-20 minutes.

APPLE SYRUP
  • 1 cup sugar
  • 2 cup apple juice
  • 2 tablespoon corn starch (you can add more if you like your syrup thicker)
  • 2 tablespoon lemon juice
  • 1/4 teaspoon cinnamon
  • 1/4 cup butter
Mix ingredients together in a pot and boil for 1 minute. Serve warm.

I love these! We use a different syrup than the apple- very similar and it does make all the difference. They are so yummy. Maybe I'll make them this weekend :)
