Honey Glazed Carrots

I made this on Christmas Eve to go along with a prime rib roast and it was absolutely delicious! It was very easy to make and had all the ingredients on hand. It's perfect to serve with both a casual and fancy dinner. I got it from

  • 4-1/2 cups baby carrots
  • 1/2 cup and 1 tablespoon honey
  • 1/4 cup and 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
Place 1 in. of water in a saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain. In a small skillet, combine the honey, brown sugar and lemon juice. Cook and stir until bubbly. Add carrots and stir until well coated.
