Like I mentioned in my previous post, I had a bunch of fruits, veggies, and herbs that were going to go bad soon, so I went to the trusty AllRecipes.com site and found this great recipe for rice for me to use up a bunch of cilantro I had. I served it with some sauteed shrimp....excellent meal!ORANGE CILANTRO RICE
- 2 teaspoons butter
- 1/2 cup diced onion
- 1 cup uncooked long grain white rice
- 2 teaspoons ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper (optional)
- salt to taste
- 1 1/2 cups orange juice
- 1/2 cup chicken broth
- 1/2 cup chopped fresh cilantro
Remove cooked rice from heat, and gently mix in cilantro to serve.

This looks great, I love rice pilafs that are more about spices and flavour than large ingredients.
