PUMPKIN CHOCOLATE CHIP BREAD
- 1 (15 ounce) can pumpkin puree
- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 1 cup brown sugar
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoons salt
- 1 teaspoon pumpkin pie spice
- 1 bag semi-sweet chocolate chips
In a large bowl, mix together pumpkin puree, eggs, oil, and sugars until well blended. In a separate bowl, whisk together the flour, baking soda, salt, and spices. Stir the dry ingredients into the pumpkin puree until just blended. Pour into prepared pans.
Bake for about 40 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
