Pumpkin Dip

My sister-in-law, Shellie, passed this recipe on to me a couple of weeks ago. I decided to make it and try it out at a family reunion that we had yesterday and it was a big hit! We served it with vanilla wafers, ginger snaps, and apple slices. I think the vanilla wafers tasted the best with it.

PUMPKIN DIP
  • 1 container of whipped cream cheese
  • 2 cups confectioners' sugar
  • 1 can solid pack pumpkin
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon frozen orange juice concentrate (I actually forgot to put this in the dip and it was still very good!)
In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill until serving.

I'm making something similar to this for my dad's birthday party on Saturday -- YUM. Thanks for the tip about the vanilla wafers, though -- I was just going to use gingersnaps, but now I'll use both!

I was one of the recipients of this dip this weekend. I liked it best with apples, then ginger snaps next. But it was also really good with a spoon! Thanks Lisa for being a great cook!
