Pomegranate Salad

Once a month us leaders at church teach the Young Women (ages 12-15) how to cook/bake and we call it Betty Crocker Night. It's been a big hit so far and next month the girls are going to make us dinner using the recipes they've been taught. One of the families that attends our church is on a macrobiotic due to the health of one of their children. We asked them for a recipe for their favorite dish and this is what they gave us!

This salad is very refreshing, healthy, and delicious! Joe loves it because he likes pomegranates so much. I love it because it tastes so good and very healthy for me.

POMEGRANATE SALAD
  • 4 pomegranates, seeded
  • 1 cup of raisins or currants
  • 2/3 cup chopped almonds
  • 2 apples, chopped
  • 8 chestnuts, chopped
  • 1 cup celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup green onions, chopped
  • 1/2 teaspoon curry powder
  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 teaspoon salt
In a large bowl, combine the first 8 ingredients. To make the dressing, whisk together the curry powder, oil, vinegar, and salt. Pour over the salad and serve.

This is my first comment on your blog. I like to check in and see what you're up to, and I had a sneaky suspission that you are LDS, as I am. I work in YW too, and I am going to tell our pres. about your Betty Crocker night. Do you cook at the church or at someones house? We have some pretty strick rules about cooking at the church.

We only do Betty Crocker night at the church when no cooking is involved, like with this salad. Otherwise we go to a leaders house and do it.

And I haven't tried the one at the Joseph Smith Building, I'll have to try it next time I'm up there!
