
Every other week I go to the library and I always make sure to check out some cookbooks. This is a great cookbook that I recently checked out that is made for vegans and vegetarians, or people who just want to eat healthier!

These sweetened pecans are so good served as a dessert - on top of ice cream, for example - or on a salad. We first served these on a salad with strawberries and avocado....it was perfect!!
MAPLE GLAZED PECANS
- 2 cups pecans
- 1/2 cup maple syrup
- 1/4 cup sugar
- 1 tablespoon salt
Preheat the oven to 350 degrees. Spread the pecans on a baking sheet and toast until lightly browned and fragrant, 8-10 minutes. Remove them from the oven and set aside.
Heat the maple syrup and sugar in a medium saucepan over medium heat, stirring frequently, until boiling. Boil the mixture for 2 minutes, and then add the toasted pecans. Continue cooking, stirring to coat the pecans, about 30 seconds more. Spread the pecans onto a baking sheet to cool. Sprinkle with salt.
