Praline Spice Cake

For a couple of years, ages 7-8 of my life, my family lived in Shreveport, Louisiana. Thus the reason I had to purchase this cookbook!
I made this cake yesterday and we really loved it! I didn't pour the cake batter in two pans like the recipe calls for and it still turned out fine. The cake was very easy to make and is nice because it's different from the typical cake you would bake.

PRALINE SPICE CAKE
  • 1 spice cake (the kind you make from a box)
  • 1 (1-pound) package light brown sugar
  • 2 tablespoons flour
  • 2 eggs, beaten
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla
  • 1 1/2 cups pecans, coarsely chopped
Make cake according to instructions on the box. Pour cake batter into 2 greased and floured 9x13 pans. Bake at 350 degrees for about 30 minutes, or until done. Remove from oven and cool.

In a skillet mix light brown sugar, flour and eggs in melted butter. Cook for 3 minutes over low heat. Remove from heat and stir in vanilla and pecans. Spread evenly over surface of cooled cakes. Bake for about 8 minutes at 400 degrees to set the frosting. Cool and cut into 1 1/2 inch strips.
