This recipe came from another red binder that can be found in every kitchen - Betty Crocker's Cookbook! There are lots of great basics in there, including this recipe. I had never made my own fruit vinaigrette and this was a wonderful recipe!!
RASPBERRY VINAIGRETTE
- 1/3 cup seedless raspberry jam (I had a homemade strawberry raspberry jam that I used)
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 1/4 teaspoon salt
Beat all ingredients with wire whisk until well blended. Store covered in refrigerator.
