Blueberry BBQ Sauce

Like I mentioned in the previous post, I have a lot of blueberries on hand and needed new ideas of how to use them before they went bad. Somewhere I had heard of blueberry bbq sauce and so I turned to trusty ol' Google to find me a recipe. I did check my usual sites but had no luck. I found a recipe from The BBQ Report that looked easy enough so I thought I'd give it a go. It was delicious! I was out of chicken to serve it with so I ran over to KFC and picked up some grilled chicken breasts. I loved the fruitiness of the sauce with the chicken.

BLUEBERRY BBQ SAUCE
  • 2 cups fresh blueberries
  • 1/4 cup balsamic vinegar
  • 3 tablespoons honey
  • 3 tablespoons ketchup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
Combine all the ingredients and bring to a boil. Reduce heat and simmer for 10-12 minutes. Remove from heat and allow to cool. Pour the sauce into a blender and blend until smooth.

YUM! You know what a sucker I am for BBQ sauce right now, so I will DEFINITELY be trying this!

Goodness, I've tried something similar with blackberries and used it on a pork loin roast and it was mighty good.
