Coconut Pancake Syrup

I recently made a Thai dish (not good enough to post on here) and had a lot of leftover coconut milk and couldn't figure out how to use it. I searched on AllRecipes.com for something and saw this recipe for Coconut Pancake Syrup. It was super easy to make and we all LOVED it! We ate it with waffles one night and then shared it with my inlaws and ate it with Swedish pancakes another morning. Delicious both times!

COCONUT PANCAKE SYRUP
  • 1 can coconut milk
  • 2 tablespoons corn starch
  • 2 cups light corn syrup
  • 1/2 cup white sugar
  • 1/2 cup shredded sweetened coconut
Whisk together the coconut milk and cornstarch in a saucepan until the cornstarch is dissolved. Pour in the corn syrup, sugar, and coconut; bring to a boil, stirring continually. As soon as the mixture comes to a rolling boil, remove from heat. Allow to cool completely before serving.
