Cake Balls


This year I wanted to try some new things for Valentine treats although my normal tradition of these sugar cookies are going to be missed. If I wasn't dieting I would have made those cookies PLUS these cake balls...and eaten most of both.

Cake balls seem to be really trendy right now so I thought I'd jump on the bandwagon and try them out for myself. They are definitely easy to make - a perfect kid's dessert. They are also deliciously moist and just a perfect treat for the holidays. I really wanted to make a red velvet cake with cream cheese icing and then dip them into dark chocolate (HEAVEN) but the grocery store was sold out of red velvet cake mix and I was too lazy to go to another store. Once that option was out my creativity also went out and I couldn't think of any other good combos. So I stuck with the classic chocolate cake and chocolate fudge icing. Then I dipped them in white chocolate and sprinkled them with red sugar. Pretty!

CAKE BALLS
  • 1 package cake mix of your choosing
  • 1 container prepared icing of your choosing
  • 1 package of bakers chips (the chocolates meant for melting and dipping)
Prepare the cake mix according to the packaged directions. Once the cake is baked, let it cool for 30 minutes. Crumble the cake into a bowl and mix with the icing. Put this mixture into the fridge to cool for a couple of hours. Once cooled, make tablespoon-sized balls with the cake.

In a glass bowl, melt the bakers chips in the microwave until melted....but don't overcook! The best way to melt it is to do it slowly and once half the chips are melted just keep stirring until all the chips are melted.

Dunk the cake balls into the melted chocolate and then place on wax paper to harden. Sprinkle with colored sugar or any other decor before the chocolate has set.
