My friend Cassie recently posted
this recipe for Chubby Hubby Cookies on her blog and I knew I had to make them for Joe pronto - Ben & Jerry's Chubby Hubby ice cream is his favorite! Colton helped me make these as a surprise for "dada" tonight and it was a lot of fun. They were easy to make and turned out delicious.
CHUBBY HUBBY COOKIES
- 3/4 cup butter, softened to room temperature
- 1 cup sugar
- 1/2 cup firmly packed brown sugar (I just realized that I forgot to add this and the cookies still tasted great!)
- 1 egg
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 cup chocolate chips
- 3/4 cup peanut butter chips
- 1/2 cup crushed pretzels
Preheat oven to 350 degrees and either line parchment paper on a baking sheet or grease it up. Beat together the butter and sugars until fluffy. Beat in egg and vanilla. In a separate bowl, sift together the flour and soda. Add this to the batter and mix until blended. Add the remaining ingredients. Drop by rounded tablespoons (or a small scoop) on baking sheet and cook for 11-13 minutes.
