Lemon Honey Chicken

I have a wonderful slow cooker cookbook that I would recommend to anyone called 200 Slow Cooker Creations. The recipes are easy to follow, use simple ingredients, and I personally know one of the authors and she's awesome! We all loved this recipe and I will definitely be making it again. It's a nice light dish for the summer!

LEMON HONEY CHICKEN
  • 4 boneless, skinless chicken breasts
  • 1 1/2 teaspoons ginger
  • 1/2 cup lemon juice
  • 1 cup honey
  • 2 (14-ounce) cans chicken broth
Place chicken in a greased slow cooker. Combine the remaining ingredients and pour over the chicken. Cover and cook the chicken on low heat for 6-8 hours or on high heat 3-4 hours.

Note: Sauce can be thickened by adding small amounts of instant potato flakes until the desired consistency is reached.
