Cucumber Salad

Quite literally, I come from a "meat and potatoes" family. This past weekend Joe and I spent time with my family at their cabin and every meal consisted of venison (my dad shot a deer last week) and potatoes (although one meal had rice). How my family is not sick of this, I don't know.

Since marrying Joe I have been introduced to the wonderful world of fruit and vegetables and much prefer this world to the meat and potatoes world. Since my family can't comprehend the food pyramid and how much fiber they should be eating daily (love you Mom!), I have taken it upon myself to take fiber-licious side dishes to every meal I eat with them.

This past Saturday was my parent's 30th anniversary. Naturally, I forgot about this and just carried on my day as normal. I showed up for dinner with a new recipe that I got from http://classiccookery.blogspot.com/. It's a cucumber salad adapted from a cookbook called Slenderella. Cute name! Anyhoo, my mom went CRAZY for this salad and said it was the best anniversary gift I've given her in years! So thank you Classic Cookery for saving me and my forgetful memory. Love you Mom and Dad!

CUCUMBER SALAD
  • 4 cucumbers, sliced thin (I peeled mine too)
  • 3 tbsp apple cider vinegar
  • 2 tbsp sour cream
  • 1/4 cup yogurt
  • 1/2 tsp salt
  • 1 tbsp chopped dill weed

Soak cucumber in ice water for 30 minutes, and drain well. Mix together the vinegar, sour cream, yogurt, salt, and dill. Mix with the cucumbers and chill.

lol, I totally know how you feel! I discovered vegetables after moving out myself. I had never had yams or fennel or... really anything scarier then lettuce, carrots, celery or tomatoes.

Although venison sounds good.

I think my mom would like something like that. She has this great German cucumber salad we used to eat that had vinegar and some spices from some German packet. I'll have to pass it on to her.

He's now hunting in the backyard of the cabin they finished building this year. My dad also got a temporary job with an outfitter in Idaho to be a hunting guide. It's his dream job!!

It has been so wonderful and moving to see Lisa make the transition from cavedweller to metropolitan.

I remember a comment from her a few years back that she made over a meal someone created consisting of an assortment of vegetable dishes: "Where's the meat? How can you have a meal without meat?"

I used to believe she was the heir-apparent to the "Where's the beef!?" lady from the old Wendy's commercials.

Luckily, though, she has found greener pastures and, more often than not, eats from their delicious bounty.

This salad looks beautiful....the cucumbers are sliced so perfectly-paper thin.
