DELI-STYLE CUCUMBER SALAD
3/4 cup distilled white vinegar
Cooking is my therapy.
Preheat the oven to 350 degrees. Grease a 2-quart baking dish.
Tear the bread into bite-sized pieces and spread out onto 2 baking sheets. Toast the bread in the oven for about 20 minutes and then transfer to a mixing bowl.
Melt 2 tablespoons of butter in a skillet and add the mushrooms; saute for about 6 minutes. Then add 2 more tablespoons of butter and the celery, onion and thyme. Saute for about 5 minutes. Add the sage and 4 more tablespoons of butter. Add the broth and stir to combine. Salt and pepper to taste.
Pour this mixture over the toasted bread and mix. Pour this mixture into the baking dish and bake for 40 minutes, or until the top is golden brown. Allow to cool for 15 minutes before serving.
My friend Cassie posted this recipe on her blog and I just had to try it! We're big fans of grapes around here....plus all the other ingredients in this salad. I served it to my family last night and it was a hit with everyone. My sister told me that it's her new favorite side dish that I make! Definitely try it this summer!!
I can't even remember how I ran across this recipe on AllRecipes.com but I saw and knew I had to make it for Christmas Eve. I like to celebrate other cultures around Christmas, primarily in food form. I've made a Kwanzaa Coconut Cake, popular dishes eaten in European countries on Christmas, etc. So I made this classic Jewish dish (you can read about it's origins here) and it was super easy to make. I was a little hesitant about how it was going to taste but the whole family loved it! My sister said it tastes like an apple struedel in noodle form. I highly encourage everyone to try it.
A few weeks ago I bought a 10-pound box of sweet potatoes thinking I'd use them up quick because of Thanksgiving and I have found myself with a TON of sweet potatoes leftover. I'm trying out new recipes and I found one that I'm really liking. This recipe for twice-baked sweet potatoes is awesome because it is so versatile. You can follow the recipe (it's really good) or add your favorite toppings - coconut, marshmallows, orange zest, etc. And I also love it because you're not committing yourself to a huge casserole that you'll be eating for leftovers all week. You can just make one per person and also make them to each persons liking! Love it!
I got this recipe from the Kraft website and decided to test it out on family as a possible contender for Thanksgiving. It was easy to put together and we all loved it! The only problem was deciding if it was a side dish or a dessert. If you are looking for a new sweet potato dish to try out for Thanksgiving, use this one!Drain pineapple; reserve juice. Heat reserved pineapple juice in a small saucepan over low heat; add marshmallows, stirring until melted. Add cream cheese, stirring until smooth. Remove from heat. Dissolve Jello in boiling water; cool. combine marshmallow mixture with gelatin; chill until jelled to the consistency of unbeaten egg white. Stir in crushed pineapple and grated carrot; pour into an 8-inch square pan; cut carrot salad in squares to serve.
I receive the newsletter GOOP written by Gwyneth Paltrow every week. She has a lot of great tips and last week she included 5 easy recipes that her family likes to eat. I had just recently bought a big bag of lentils so I could make some baby food for Colton with it and thought I'd try this recipe. It was so delicious and because lentils are packed with protein and fiber, it made us full really fast! This is a very healthy recipe and wasn't hard to make at all.Toss the sweet potatoes with 1 1/2 tablespoons of olive oil, the maple syrup and one pinch of chili. Roast, stirring, until caramelized and a paring knife slips easily through a piece, about 20 minutes.
Meanwhile, heat the additional two tablespoons of olive oil in a large saucepan over medium-low heat. Add the remaining pinch of chili, onion, carrot, garlic, oregano, pepper and thyme. Cook for 10 minutes, stirring occasionally, until the vegetables are a bit softened and just beginning to brown. Add the lentils and four cups of cold water. Bring to a boil over high heat, turn down to low, cover, and simmer for about 40 minutes or until the lentils are soft.
Let the lentils cool to room temperature. Fold the lentils together with the sweet potatoes. Drizzle with your good olive oil, sprinkle with salt and parsley, and serve.
For Easter dinner I wanted to do something different than the normal rolls that are always served. I was looking through Pioneer Woman's recipes and found this one. I was a bit hesitant to try the recipe because I'm not a fan of bleu cheese, but I know everyone else in my family likes it...so why not go for it.
This is my last "Best of the Best" cookbook! I have a lot of recipe marked off to try in this one. Also, if you are into dutch oven cooking, there are a lot of recipes in this cookbook for that.
Joe moved from Colorado to Atlanta, Georgia when he was 12 years old; that is where he spent the remainder of his teenage years. Atlanta is such a beautiful and fun place to visit! I wish airline tickets were cheaper because I'd be flying there non-stop.
