I got this recipe from my friend, Anjie (her cute family blog is aboutthebodilys.blogspot.com). She used to live in my neighborhood and we had the same calling at church. We both love to cook and enjoy exchanging recipes! She recommended eating this dish with pico de gallo and served over rice. We did that and it was excellent! Next time I think I'll try serving it in a tortilla, making it a burrito. Since this is a crockpot meal, it's so easy to throw together. In fact, Joe put it together and he did great!
She got this recipe from www.recipezaar.com, another great website for tried and true recipes.
CROCKPOT MEXICAN CHICKEN
- 4-5 boneless chicken breasts
- 1 can black beans
- 1 can corn
- 1 jar salsa
- 1 package cream cheese
Place 4-5 FROZEN chicken breasts in the crockpot. They will thaw and cook all at once in there. Drain the beans and corn. Add them to the crockpot, as well as the jar of salsa. Cook on high for 5 hours. Add the cream cheese and cook for another hour. That's all! Easy, right?

Since we sold our jetta and haven't bought another car yet, I can't go to the store as often as I would like, or at the spur of the moment if I need another ingredient or something...anyway, I'm going to do this one tomorrow night, because I have all the things required to make it! What size jar of salsa? We only buy Costco's Jack's Salsa (all fresh ingredients and SUPER tasty!) so I need to know about how much to put in :)
Jars of salsa are usually 16 ounces, so go for that. We get that salsa too, it's really good!
