Popeye Pancakes

My mom is the master of making the yummiest breakfasts. My favorite food memories growing up were pancakes every Saturday morning and her homemade apple syrup. Even if she's not making a hot breakfast she always has the best cereals and Pop-Tarts on hand!

"My new favorite pancakes! They are essentially Puffy Ovens but they didn't rise. Was it the fruit, or the cabin oven? Oh well, they were delicious!!" - Mom

POPEYE PANCAKES
  • ¼ cup butter or margarine
  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/4 cup sour cream (optional)
  • 2 cups fresh fruit
Melt butter in 9x13 pan. Mix together eggs, milk, and flour (I also add ¼ c. sour cream). Pour into pan. Add the fruit over the top of the egg mixture and bake for 30 minutes at 350 degrees.
Serve with maple syrup, whip cream, or both!

Mom, what fruit did you use? I have a bunch of peaches on hand, would that work for this dish?

Any fresh fruit would be yummy. I used blueberries one time and strawberries another time. Both were great! I think I'll try peaches too, this weekend, it sounds delicious!

Wow, I am going to try these. I make this recipe without the sour cream and fruit and serve it with Roast Beef with gravy over the top. I think it is called Yorkshire Pudding (although it is not really pudding, it is an English thing) or Dutch Baby.
