Corn, Bacon, and Zucchini Medley

Now that the weather is getting warmer, all I want to do is BBQ! This is another favorite side dish to make. This is my dad's most requested dish during the summer and it's very simple to put together!

  • 1 slab bacon, chopped
  • 2 medium-sized zucchini, chopped
  • 2 cans corn (use fresh corn if it's available!)
  • 1 pinch pepper
  • 1/2 cup shredded Colby Jack cheese
Place bacon in a large, deep skillet. Cook over medium-high heat until crisp. Reserve 1 tablespoon of drippings, but drain the rest.

Heat the bacon drippings in the skillet over medium heat. Saute the zucchini and corn until tender but still crisp, about 10 minutes. Season with pepper. Spoon vegetables into a bowl, and sprinkle with chopped bacon and shredded cheese.
