Minestrone Bean Soup

Because of my recent leg surgery, my duration to stand up and cook is very short. So I've been going through my recipes trying to find things that take the least amount of prep time. This is a recipe I got at one of my bridal showers. I had a "kitchen" theme and everyone had to bring a recipe for me. This one came from a neighbor of my parents who also happens to be the mom of Elder D. Todd Christofferson!

MINESTRONE BEAN SOUP
  • 1/2 lb. lean ground beef (I like using ground turkey)
  • 1/4 onion, chopped
  • 1 can minestrone soup
  • 1 can red kidney beans
  • 1 can pork and beans
  • 1 can water
In a skillet, cook the ground beef and onion together until cooked all the way through. Add this mixture to a pot with the rest of the ingredients. Bring to a boil and then simmer for 15 minutes.

That looks really good, and so simple to make! I can't believe you're even cooking at all. If I were you I'd be lying in bed and making my husband wait on me hand and foot! :o)

I have this recipe and even my kids love it and it's soooo easy!
