Marinated Salmon Steaks

All-Time Favorite Fish Recipes is a great cookbook for beginners in cooking fish. The first quarter of the book details how to clean a fish, fish substitutes, and were common freshwater fish are found in the US. It highlights how to cook just about ever freshwater fish, so no matter where you live, you can get a fresh fish and find a recipe in this book to use.

My favorite fish to eat is salmon. I was excited to see this marinade recipe because it's different from other recipes I've seen. Most recipes for salmon are Asian inspired but this one is more citrus centered. This dish was very fresh tasting and I absolutely loved the citrus flavor!

MARINATED SALMON STEAKS
  • 1 tablespoon grated orange zest
  • 1/2 cup orange juice
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried parsely flakes
  • 1/2 teaspoon dried tarragon leaves
  • 4 salmon steaks (8 oz. each), 1 inch thick
  • 2 tablespoons butter, melted
In a large plastic food-storage bag, combine marinade ingredients. Add salmon steaks. Secure bag; turn to coat. Chill 1-2 hours, turning bag occasionally.

Spray rack in broiler pan with non-stick vegetable cooking spray. Drain and discard marinade from steaks. Arrange steaks on prepared broiler pan. Brush evenly with melted butter. Place under broiler with surface of fish 6 inches from heat. Broil for 5 minutes. Turn steaks over. Broil for 8-10 minutes longer, or until fish is firm and opaque and just begins to flake.

This sounds like a cookbook I may need to buy. I'm not a huge fish fan, but I know I need to start eating more of it because it's so good for me. This does sound like a good book for beginners!
