- 1 English or seedless cucumber, finely chopped
1 green onion, washed, ends removed, thinly sliced
2 tablespoons fresh cilantro leaves, cut into strips
3 to 4 tablespoons seasoned rice vinegar
2 cups fresh strawberries, hulled, diced small
1 yellow pepper, stemmed, cored, seeded, diced small
In a medium bowl mix the cucumber, green onion, cilantro and vinegar. Cover and chill at least one hour.Just before serving, fold in the strawberries and yellow pepper.
