I have a lot of peppers and eggs on hand right now, so I wanted to make an omelet. I looked through my Taste of Home cookbook and found this recipe (you can find it online
here). It went along perfect with my "one-skillet" theme for the week. The whole family loved it and we'll be making it often!
OVEN DENVER OMELET
- 8 eggs
- 1/2 cup half-and-half cream (I used whole milk)
- 1 cup (4 ounces) shredded cheddar cheese
- 1 cup finely chopped fully cooked ham (I used bacon)
- 1/4 cup finely chopped green pepper
- 1/4 cup finely chopped onion
In a bowl, whisk the eggs and cream until light. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9-in. square baking dish. Bake at 400° for 25 minutes or until golden brown.
