Slow Cooker Burritos

Today we tried the Burritos from 101 Things To Do With A Slow Cooker, which one of my friends (Janet Eyring) was a co-author of! She currently appears on Channel 5 with her recipes and has this blog of recipes.

These burritos are delicious! Way better than anything that I've tried to create on my own at home; they are definitely restaurant-worthy. If you do make these, I would absolutely recommend that you go to a local Mexican restaurant/fast food place and get fresh tortillas because that makes a big difference in the taste of your food. Not a chain like Taco Bell, but a locally owned place. If you live in Utah, go to Beto's! Anyways, these are very easy to make and I made healthier changes and it still tasted really good.

SLOW COOKER BURRITOS
  • 1 pound ground beef, cooked and drained (I used ground turkey)
  • 2 cans refried beans (I used the fat free kind)
  • 1 envelope taco seasoning
  • 1 can tomato sauce
  • 1/2 cup water
  • Flour tortillas, sour cream , cheese, and any other toppings you like
Combine all the ingredients except tortillas in a greased slow cooker. Cover and cook on low heat 6-10 hours. Spread hot bean mixture on tortillas and fill with your favorite toppings. Fold and enjoy!

what size can of tomato sauce do you use? i think i'll be making this for dinner tonight. do you think it would work if i left out the meat?

You use an 8 ounce can. I think you could leave out the meat. I probably wouldn't cook it as long if there's no meat, maybe just 4 hours? I don't know. Try it out and let me know how it works!

This was super yummy. We are also big fans of the uncooked tortillas - we love the CostCo tortillas. We'll be making this one again :)

I love this recipe. I have made it many times and we actually like it better served on tortilla chips with nacho cheese sauce as nachos... if you haven't already you should try it that way!!!
