Sweet Potato Steak Fries

I am so in love with sweet potatoes! I've yet to find a dish with them in it that I don't like. This recipe comes out of 12 Best Foods Cookbook. This is a cool cookbook because it highlights the 12 healthiest foods and provides over 200 recipes that uses these foods. According to this cookbook the 12 healthiest are: blueberries, black beans, sweet potatoes, oatmeal, salmon, spinach, broccoli, tomatoes, chocolate (dark), walnuts, soy, and onions.
Joe and I ate these fries with some BBQ chicken and both agreed that they were the best part of the meal. They are very easy to make and a wonderful alternative to french fries!

SWEET POTATO STEAK FRIES
  • 2 large sweet potatoes, unpeeled
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon kosher or sea salt
  • 2 teaspoons chopped fresh thyme (I used dried)
  • 1/4 teaspoon chopped fresh rosemary (Again, I used dried)
  • Freshly ground black pepper
Preheat the oven to 450 degrees. Halve the sweet potatoes crosswise. Stand each on the cut end and halve it vertically, then cut each piece lengthwise into 4-6 half-inch slabs.

Put the sliced potatoes on a baking sheet and drizzle the oil over the slices. Add the salt, thyme, rosemary, and 4-5 grinds of pepper. Using your hands, toss the potatoes to coat them with oil and seasonings.

Bake for 15 minutes. Using tongs, turn each slice. Bake 10 minutes longer, or until potatoes are browned. Serve immediately.

Those look YUMMY. I, too, adore the sweet potato. I don't think it's possible for them to taste bad (even the sweet potato baby food is delicious, I don't know if you've tried it, but I have, and I love it as much as Andrew does!).

Those look delicious. I just might have to try them. I love sweet potatoes anyway. I should get a cookbook like this, but I cook with a lot of those things since we don't eat meat! It'd be nice to have new recipes to use!
