Bacon Grilled Cheese

This is such a good sandwich! It was perfect to eat on a cold, snowy night. Warmed us right up!! This will definitely be a regular sandwich that I make. You can find the original recipe on the Better Homes and Garden website here.

BACON GRILLED CHEESE
  • 4 slice of honey wheat bread (I used what we had on hand - sourdough bread)
  • 2 tablespoons butter, softened
  • 3 ounces of smoked cheddar or Pepper Jack slice (we used Pepper Jack)
  • 4 slices bacon, cooked crisp
  • 1 small avocado, pitted, peeled, and sliced
  • 2 tomato slices
  • 1 tablespoon light mayonnaise
  • 1 teaspoon honey
Butter one side of all the bread. On the unbuttered sides of 2 slices place cheese, bacon, avocado, and tomato. Combine light mayonnaise and honey. Spread on unbuttered side of remaining 2 bread slices. Place mayonnaise side down on top of tomatoes.

In skillet or griddle, cook over medium heat 4 to 6 minutes, until toasted and cheese is melted, turning once. Or place in preheated panini maker; cook 2 to 3 minutes. Makes 2 sandwiches.

This sounds so good! I've never used honey in a grilled cheese. I will try these out next time I make grilled cheese and soup. Thanks :)

That is definitely a kicked-up grilled cheese. I can't wait to try this -- I love BHG!
